VALIDAÇÃO DE INSTRUMENTO DE MEDIDA SOBRE A PERCEPÇÃO DO USO DE FLORES COMESTÍVEIS

O uso de flores comestíveis tem sido explorado como estratégia de inovação na indústria de alimentos, embora sua aceitação pelo consumidor ainda esteja associada a percepções ambivalentes de risco e benefício. Este estudo teve como objetivo desenvolver e validar um instrumento psicométrico para mensurar essas percepções, tomando a flor de dália como estímulo empírico. A pesquisa foi conduzida com abordagem quantitativa, descritiva e transversal, em amostra não probabilística composta por 100 participantes. O instrumento, estruturado em escala Likert, foi submetido à análise fatorial exploratória com extração por mínimos quadrados não ponderados (minres) e rotação oblíqua. A análise identificou dois fatores latentes (riscos e benefícios percebidos), com cargas fatoriais superiores a 0,60, comunalidades satisfatórias e consistência interna adequada (α ≥ 0,76). A estrutura bifatorial foi posteriormente examinada por meio de análise fatorial confirmatória, utilizando o estimador WLSMV, com índices de ajuste compatíveis com os critérios da literatura (CFI = 1,000; RMSEA = 0,000). Os resultados fornecem evidências preliminares de validade interna do instrumento. Recomenda-se a realização de estudos complementares com amostras independentes e análise de validade externa para ampliar sua aplicabilidade em contextos de pesquisa e desenvolvimento de produtos alimentícios.
