AVALIAÇÃO FÍSICO QUÍMICA, MICROBIOLÓGICA E CONDIÇÕES DE ARMAZENAMENTO DA ÁGUA UTILIZADA EM FOOD TRUCK NA CIDADE DE PARAÍSO DO TOCANTINS
Abstract
Na elaboração das refeições nos food trucks, o uso da água da potável está envolvido no preparo e sanitização dos alimentos, higienização de mãos de manipuladores, de utensílios e superfícies que entram em contato com alimentos. O estudo avaliou a qualidade da água utilizada e as condições higiênico sanitária em food truck. Foram realizadas coletas mensais na cidade de Paraíso do Tocantins em quatro (04) food trucks A, B, C e D no ano de 2019, com quatro (4) tratamentos e doze (12) totalizando 48 amostras pesquisadas. Foram realizadas análises de Condutividade elétrica (CE), cloro residual livre (CRL), potencial hidrogeniônico (pH), turbidez, coliformes totais e termotolerantes. A fim de verificar se houve diferença significativa entre os resultados aplicou-se a ANOVA e entre as médias das variáveis de resposta o teste de Tukey ao nível de 5% de significância. A Análise de Componentes Principais (ACP) foi usada para agrupar as variáveis físico-químicas em função da similaridade. A análise estatística foi realizada utilizando o programa Sisvar versão 5.6. Não houve diferença significativa (p<0,05) para as variáveis físico-química analisadas. Os resultados das análises de cloro livre, potencial hidrogeniônico, pH, turbidez, coliformes totais e termotolerantes apresentaram valores em conformidade com a legislação vigente. Recomenda-se o contínuo monitoramento da qualidade da água, limpeza e manutenção das torneiras e caixas d’água para minimização dos riscos à saúde da ingestão de alimentos preparados com água que não atenda ao padrão de potabilidade.
