INQUÉRITO MICROBIOLÓGICO E POSSÍVEIS CONTAMINAÇÕES ASSOCIADAS AOS PROCEDIMENTOS DE MANIPULAÇÃO DE CARNES COMERCIALIZADAS EM AÇOUGUES DE TEÓFILO OTONI-MG

O consumo de carnes obtidas através de açougues é uma prática muito comum em todo território nacional. Embora os órgãos fiscalizadores tenham intensificado suas ações para a regulamentação do abate, armazenamento e manipulação dos produtos cárneos, ainda assim é frequente a presença de amostras possam apresentar risco de contaminação. O estudo objetiva analisar o índice de contaminação em açougues do município de Teófilo Otoni através de análises obtidas por relatórios da vigilância sanitária municipal. Observou-se um alto índice de contaminação dos açougues, principalmente ao que se refere aos equipamentos, destancado-se a Escherichia coli como maior agente de contaminação. Portanto, é importante que promova capacitações aos manipuladores e intensifique as práticas de orientação e fiscalização do comercio local de carnes.
