Since prehistoric times, honey has been used as both food and medicine. Initially extracted through
aggressive methods, its production evolved with sustainable techniques and rational hives, giving
rise to beekeeping and preserving colonies. This study aimed to compare the physicochemical
properties of honey produced by the stingless bee Uruçu Amarela (Melipona flavolineata) in two
localities of the Pará state: Santarém and Bragança, as well as to investigate variations in quality
parameters and evaluate the possibility of distinguishing samples using multivariate statistical
analyses. Twenty samples were collected, tem from each municipality. The analyses included pH,
electrical conductivity, density, moisture, total soluble solids (TSS), acidity, and viscosity, conducted
according to official methodologies. The results revealed significant differences between the two
regions: samples from Santarém showed lower pH, higher moisture and acidity, while those from
Bragança exhibited higher TSS, density, and viscosity. Multivariate analyses demonstrated that the
physicochemical characteristics clearly distinguished the samples by geographic origin, forming two
well-defined groups. The study concludes that, although all samples present good quality, there is
relevant variation between producing regions, influenced by environmental and floral factors. It also
highlights the lack of specific standards for stingless bee honeys, reinforcing the need for further
research to standardize quality and support commercialization regulations.
