INTELIGENCIA ARTIFICIAL APLICADA A LA GESTIÓN DE LA CADENA DE SUMINISTRO EN UNA INDUSTRIA DE PANIFICACIÓN: UN ESTUDIO DE CASO CON SAP BUSINESS ONE

La creciente complejidad de la cadena de suministro exige soluciones que integren agilidad, previsibilidad y reducción de costos. Este estudio tiene como objetivo analizar la aplicación de la Inteligencia Artificial (IA) en una industria de panificación de tamaño medio, ubicada en Minas Gerais, a partir de la implementación del software SAP Business One. La investigación es de naturaleza aplicada, con un enfoque cuali-cuantitativo. Se utilizaron cuestionarios semiestructurados con la gestora de suministros y análisis de indicadores antes y después de la adopción del sistema. Los resultados señalaron mejoras significativas: aumento de la precisión de los inventarios, reducción de pérdidas, mayor confiabilidad en la previsión de la demanda e integración entre los sectores. Se concluye que la aplicación de la IA en la cadena de suministro agrega un diferencial competitivo y contribuye a la eficiencia operativa, siendo una alternativa viable para sectores tradicionales.
